Sambar powder or pudi is a flavorful basic ingredient to make Sambar. Basically it is lentil based gravy which is very popular in South India. Sometimes this powder used as universal curry powder or Rasam powder. Sambar powder making is very simple and useful thing that we would use every day. The ingredients required for Sambar powder is too basic, common and homely spices. The most important advantage for making Sambar powder is that it can be used for longer duration (around 6 months). Also you can customize the ingredients according to your taste.
Chana dal – 1 cup
Urad dal – ½ cup
Dried Red Chilies – 8-10 (as per taste)
Dhaniya or Coriander seeds- 1 cup
Jeera or Cumin seeds – ¼ cup
Menthya or Fenugreek seeds- 1 tsp
Mustard seeds- 2 tsp
Dalchini or Cinnamon – 2 pcs
Laung or Cloves – 4 pcs (optional)
Turmeric powder – 1 tsp
Hing or Asafetida – 2 pinches
Till or Sesame – 2 tsp
Oil – 1tsp
Heat a medium sized pan.
Place all dry ingredients (except Red Chilli) to the pan.
Fry these spices till it turns into a light brown color.
At the end add Red chillies according to your taste. Fry it for 2 minutes and off the flame.
Let all the ingredients cool.
Pour all fried spices to a mixer jar. Add 1 tsp of Oil to these ingredients so that spices get fine powder.
Grind fried spices finely. Now aromatic homemade sambar powder is ready.
Store the Sambar powder in a bottle or a container where no air can get in
Do not use wet spoon or wet hand while handling the Sambar powder.
Keep Sambar powder bottle in a warm place.
